Ultimate Loaded Nachos

Ingredients

  • 1 (13-ounce) bag Thick corn tortilla chips
  • 1 pound 80% lean ground beef
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 (15-ounce) can Canned black beans, rinsed and drained
  • 8 ounces (2 cups) Monterey Jack cheese, shredded
  • 8 ounces (2 cups) Sharp cheddar cheese, shredded
  • 1 cup Pico de gallo
  • 1 cup Guacamole
  • 1/2 cup Sour cream
  • 1/4 cup Pickled jalapeño slices

Steps

  1. 1

Adjust an oven rack to the middle position and heat the oven to 425°F. Prepare your toppings.

  2. 2

In a large skillet over medium-high heat, cook the ground beef until it is no longer pink, about 5-7 minutes. Drain any excess fat.

  3. 3

Stir the chili powder, cumin, garlic powder, salt, and pepper into the beef. Add the drained black beans and cook for 2 minutes until heated through.

  4. 4

On a large rimmed baking sheet, spread half of the tortilla chips in an even layer. Sprinkle half of the beef and bean mixture over the chips, followed by half of the shredded cheeses.

  5. 5

Create a second layer by arranging the remaining chips on top. Cover the chips with the rest of the beef mixture and finally, the remaining cheese.

  6. 6

Bake for 5 to 8 minutes, or until the cheese is fully melted and bubbling.

  7. 7

Remove the nachos from the oven. Dollop with guacamole and sour cream, scatter the pico de gallo and jalapeños over the top, and serve immediately.

Pro tips

  • Shred your own cheese. Pre-shredded cheese contains starches that prevent it from melting as smoothly.
  • Use sturdy, high-quality tortilla chips that can withstand the weight of the toppings without becoming soggy or breaking.
  • The two-step layering process is critical. It ensures an even distribution of cheese and toppings, so you never pull out a naked chip.
  • Add cool, fresh toppings like pico de gallo, guacamole, and sour cream *after* baking to provide a fresh contrast in temperature and texture.
